Meat is a big part of the traditional South African diet, but with the health and environmental issues of beef, many are turning to game meat as a healthier option that is leaner, contains low cholesterol and none of the hormones or antibiotics that are present in domestic farm animals. Eland is one such wild meat and the hero ingredient put forward this year by Esiweni Luxury Safari Lodge for Food for Change.
“Cows are one of our biggest contributors to the damage we have caused to the ozone layer and to our carbon footprint,” the lodge says. “We are defending eland antelope. It is a versatile animal that can be used in many ways in the kitchen – whether as a meat selection for stews and fillets or for stocks that can be made from the bones.”
